ARABIAN NIGHTS

Fragrant spices, generous plates and a feast made for sharing

Step into the warmth of a Moroccan-inspired kitchen and discover the rich, aromatic flavours of North Africa.

Guided by your chef, you’ll prepare a generous three-course feast filled with toasted spices, dried fruit, fresh herbs and fragrant rosewater. You’ll make silky hummus with warm pita, slow-cook lamb until beautifully tender and finish with golden layers of pistachio baklava.

Once the cooking is complete, everyone gathers around our long table to share the feast with wine and fresh mint tea.

WHAT YOU'LL COOK

Entrée — Hummus with Warm Pita

Silky chickpeas blended with tahini, lemon and garlic, finished with olive oil and served with warm pita bread.

Creamy, bright and beautifully balanced, it is a simple dish transformed through thoughtful technique and seasoning.

Main — Lamb Tagine with Apricots

Tender lamb slowly cooked with apricots, saffron and fragrant Moroccan spices, served with light, aromatic couscous.

Sweet, savoury and deeply comforting, the tagine develops its richness through slow cooking and carefully layered spices.

Dessert — Rosewater and Pistachio Baklava

Golden layers of crisp filo pastry, pistachios and fragrant rosewater syrup, served with fresh mint tea.

Crisp, sticky and delicately perfumed, it is an indulgent finish to the feast.


Menus may change slightly according to seasonal produce and ingredient availability.

THE EXPERIENCE

 From blending silky hummus to layering the final sheets of baklava, your chef will guide you through every stage.


You’ll learn how to:

  • Create smooth, well-balanced hummus
  • Prepare and serve warm pita
  • Toast and bloom spices to release their aromas
  • Brown lamb and build depth of flavour
  • Balance sweetness, spice and acidity in a tagine
  • Slow-cook lamb until beautifully tender
  • Prepare light, fragrant couscous
  • Handle and layer delicate filo pastry
  • Make and apply rosewater syrup
  • Coordinate and present a generous shared feast

No previous cooking experience is required. Your chef will demonstrate each technique, and every guest will take an active role throughout the class.

DIETARY REQUIREMENTS

This menu contains gluten, sesame, dairy and tree nuts, including pistachios. The standard menu also contains lamb.

Vegetarian variations may be possible by replacing the lamb tagine with a seasonal vegetable alternative.

Nut-free or sesame-free versions require substantial changes to the hummus, baklava and selected garnishes and must be arranged in advance. Gluten-free guests will require alternatives to the pita, couscous, filo pastry and baklava.

A fully vegan version may be possible only with significant menu modifications.

Please provide complete details of all allergies, intolerances and dietary preferences when booking or enquiring.

Because our kitchen regularly handles sesame, nuts, flour, dairy, eggs and other allergens, we cannot guarantee a completely allergen-free environment.

Join one of our scheduled Arabian Nights classes and cook alongside other food lovers in a relaxed and welcoming setting.

Do I need cooking experience?

No. The class suits beginners and confident home cooks, 

with step-by-step chef guidance throughout.

Is it fully hands-on?

Yes. Every guest takes part, with tasks shared across the group.

Is wine included?

Yes. Public Cook & Dine classes include a welcome drink 

and wine with your meal, 

with non-alcoholic options available.

Can dietary requirements be accommodated?

Many can be, with advance notice. As sesame, pistachios and gluten are central to this menu, some guests may need modified dishes or

 an alternative menu.

Can I book privately?

Yes. Private sessions are available for corporate groups and celebrations, subject to minimum group or spend requirements.

How long does it run?

Approximately three hours: around two hours of cooking 

followed by relaxed dining.

What should I wear?

Comfortable clothing and enclosed, flat shoes. Aprons are provided.

Is parking available?

Yes. Free parking is available at the Barracks Precinct car park 

via Bluefish Road.

Can I attend alone?

Absolutely. Public classes are social and welcoming to solo guests.

Can the menu change?

Minor seasonal or supplier-led changes may apply.
