lemon myrtle mascarpone, peak summer fruit, bright coulis

Some techniques you’ll cover

  • Oyster selection & safe shucking — grading, chilling on ice, hinge/knife position, clean cut
  • Ballotine: debone, stuff, truss, roast — sear, controlled roast to temp, rest and slice cleanly. 
  • Duck-fat potato crunch method — steam-dry for rough edges, preheated tray with fat, roast/turns and finish with garlic–rosemary and flaky salt.
  • Prosciutto-wrapped green bundles — trim , blanch, shock, then wrap;,quick pan roast, and finish
