TUSCAN REVERIE OF FRESH PASTA

A modern Australian feast with native flavours

 Roll, fill and shape fresh pasta—then settle in for a hosted Italian feast with wine.

Entrée — Hand-made Ricotta & Spinach Ravioli 

with a rich tomato sauce

Main — Individual Traditional LasagnaSlow-cooked ragù, creamy béchamel and fresh pasta sheets. served with a rocket (arugula) salad

Dolci — Crostoli & AffogatoCrisp, golden pastries by a vanilla gelato “drowned” in hot espresso (crunch then silk; a very Italian finish).

Some techniques you will cover

 Fresh pasta dough 

  • Agnolotti shaping — filling consistency, sealing, cutting and gentle cooking/finishing in sauce 
  • Ragù alla bolognese fundamentals — soffritto, proper browning, deglazing and slow reduction 
  • Classic béchamel — roux ratios, no-lump whisking, nutmeg seasoning 
  • Lasagna assembly & bake —
  • Salad craft
  • Crostoli — melt-in-your-mouth-crisp texture 
  • Affogato service — espresso timing and melt-to-sip balance
