Some techniques you’ll cover

  • Oyster selection & safe shucking — grading, chilling on ice, hinge/knife position, clean cut
  • Barramundi:  Crispy-skin, Doneness cues, Beurre blanc basics
  • Roast potato crunch method and finish with garlic–rosemary and flaked sea salt.
  • Green bundle basics — trim , blanch, shock, then quick pan roast, and finish
  • Carrot cake moisture control, Spice balance & Cream cheese frosting texture + Plating
